About a month ago I was lucky enough to stay at one of the most beautiful resorts in Mexico. The property itself was an absolute show stopper, but one of the things that I missed the most about this place was their tacos! They had an outdoor grill with the most intoxicating tacos I have ever eaten. What definitely set theirs apart was that they made their tortillas fresh by hand and after having fresh handmade tortilla shells I was basically ruined from the store bought kind that are mass produced. It was then I knew I had to set out to have a corn tortilla shell recipe that I could easily make at home.

Luckily this recipe is super simple to make and only has 3 ingredients!

 

Ingredients

  • 1 cup corn masa harina flour (and no I do NOT earn any sort of commission if you click on the link haha)
  • 3/4 cups of hot water
  • 1/2 tsp salt

Instructions

  • Mix masa harina flour, salt and hot water together to form a dough
  • Dough should neither be too sticky or dry. If the dough crumbles and is too dry add hot water a tablespoon at a time and mix to get the right consistency
  • Separate dough into small ping pong sized balls
  • If using a tortilla press place separated ping pong sized dough balls in between 2 pieces of parchment paper and press down to make a flat tortilla round. Now I went out and bought a tortilla press because I’m taco obsessed, but you do not need to do this. You can also just use a rolling pin to roll out the dough. Just make sure you flour the rolling surface with some of the masa harina as well as the rolling pin to prevent sticking. Even better idea is to roll them out on top of parchment paper with a floured rolling pin or wine bottle (no judgement).
  • Grill each tortilla shell on a pan that is lightly oiled until slightly browned

Soooooooooo EASY right?! Then you can top with all of your favourite taco fillings and toppings and eat up (I also like to use these  for breakfast tacos topped with egg and avocado in the morning). As an added bonus these are also vegan and gluten free and while I am neither of these things it’s nice in case you happen to be or if you have guests that are.

Granted this obviously takes a little bit more effort than just busting open a store bought bag, but at the end of the day you will be amazed at what a huge difference using high quality & fresh ingredients makes. Happy eating!
