Entertaining made easy with DIY customized gourmet Delissio Rustico

Recently I attended the Rustico on King pop-up located at 363 King Street West, at the corner of King West and Peter.

The pop-up, which runs until this Friday Nov 11, features free half-sized gourmet customizable Delissio pizzas. Wine is also available and is also complimentary at the pop-up. Free pizza and wine? It’s pretty much a no brainer if you ask me. More importantly though I was stoked at the idea that something as easy as a Delissio pizza could easily be tweaked to create something original and quite honestly so gourmet tasting that you’d think you were actually dining at an Italian bistro.

Available at the pop-up are three Delissio creations creations including Kale & Ricotta Pizza, Black Pepper Honey Proscuitto Pizza, and Fennel Sausage Pizza. Adding the toppings to Delissio Rustico’s Marghertia pizza before being warmed up in the oven instantly transformed them into culinary taste bud sensations.

In addition you also have the option to customize your own pizza from a list of available protein, vegetables, and sauces. I decided to go a bit simple with kale, ricotta, and caramelized onions. It was a nice way to add a personal touch while still being able to taste the fresh flavors of the base pizza.

To be honest, the idea of customizing a Delissio pizza at home had never occurred to me before, although I wish it had. After visiting the pop-up I was inspired to try my hand at creating my own customized gourmet Delissio pizzas by hosting a pizza party with a few of my favorite friends. I’ve decided to share a few of my creations below in case you want to try them out yourself.

Garlic Potato Rosemary Spinach Pizza

Ingredients:

  • Delissio Rustico Spinaci Fresca pizza as the base, which comes with spinach, red onion, and mozzarella cheese
  • One medium sized Yukon Gold potato
  • 2-3 tbsp of chopped fresh rosemary or to taste
  • 3-4 cloves of chopped garlic or to taste
  • salt and pepper to taste

Instructions:

  • Pre-heat oven to 425°C
  • Slice a Yukon potato 0.5 mm thin and toss in some olive oil with diced garlic, chopped fresh rosemary, salt, and pepper to taste
  • Top pizza with potato mixture
  • Bake in oven for 11-13 minutes or until potatoes are cooked through

Brunch Pizza

Ingredients:

  • Delissio Rustico Pollo Toscano pizza as the base, which comes with marinated chicken, roasted red pepper, and mozzarella cheese
  • Bacon or ham – as much bacon or ham as you wish to top the pizza with
  • Eggs – as many as you wish to top the pizza with.

 

Instructions:

  • Pre-heat oven to 425°C
  • Cook bacon according to package instructions and allow to cool, then crumble on top of pizza
  • Top pizza with as many eggs as you wish
  • Bake in oven for 11-13 minutes or until eggs are at your desired doneness

Fig Marsala Goat Cheese Pizza

*Recipe below has been adapted from Bon Appétit

Ingredients:

  • Delissio Rustico Quattro Formaggi pizza as the base, which comes with mozzarella, emmantal, parmesan, and blue cheese
  • 2 tablespoons plus 1 teaspoon olive oil, divided
  • 1 tablespoon minced shallot
  • 1 cup dried figs, stemmed, quartered
  • 1/2 cup Marsala
  • 1 cup water
  • 1 tablespoon minced fresh rosemary
  • 8 ounces of fresh goat cheese, crumbled

Instructions:

  • Pre-heat oven to 425°C
  • Heat oil in saucepan and toss shallot in oil until soft
  • Add figs, rosemary, marsala to pan and bring to a boil
  • Reduce heat and add 1 cup of water
  • Allow to simmer until mixture has reduced to a jam-like consistency
  • Top pizza with fig mixture and crumbled goat cheese
  • Bake in oven for 11-13 minutes or until eggs are at your desired doneness

Caprese Pizza

Ingredients:

  • Delissio Rustico Margherita pizza as the base, which comes with sweet cherry tomatoes, mazzarella cheese, and basil
  • 8 ounces of fior di latte, sliced thin
  • 2 medium sized tomatoes, sliced thin
  • A handful of fresh basil

Instructions:

  • Pre-heat oven to 425°C
  • Layer sliced tomatoes, fior di latte, and basil on top of pizza
  • Bake in oven for 11-13 minutes or until cheese is fully melted

With schedules getting crazier and crazier these days it’s nice to be able to find ways to enjoy a meal at home without having to feel overwhelmed by the task of having to cook everything from scratch. Plus everyone knows that topping the pizzas is the fun part anyways. The Rustico on King pop-up closes this Friday November 11, 2016, so you should definitely pay a visit and take advantage of the free pizzas while you still can. Once the pop-up is closed though it’s nice to know that you can still enjoy an easy gourmet-style meal at home with minimal effort for those cozy nights at home when you just can’t bear to leave the covers of your bed and Netflix.
