Allons.Y’s Happy Merry Everything Holiday Cocktail. Say what?

Ok, let’s rewind just a little bit here. Let’s start at the beginning with Planta, which is one of Toronto’s newest and arguably one of the most beautiful restaurants to hit the Toronto scene. Oh, and did I mention it’s vegan? Or rather it has a completely plant-based menu as they describe it. To be honest, I’ve always had a fascination with vegetarian/vegan establishments. I always wonder what they will produce and if their dishes can stand up to a meat-loving dominated world. Planta is one of those rare vegan finds where the dishes can stand up to their meat-counterparts and in a beautiful space to boot. What I appreciate most about their dishes is that they do not make use of imitation “meats” and proteins, rather they apply the same cooking techniques used on non-plant based ingredients to their dishes.  This results in meals that have an uncanny taste and texture to that of their meat counterparts.

I was recently asked to collaborate with Planta to create a new cocktail which would be featured throughout the holiday season. Needless to say I had a “pinch me” moment. It’s not everyday that you get asked by one of Toronto’s finest to create the bevy of your dreams.

Now disclaimer, I am not bartender, mixologist, or a connoisseur of wine and/or any spirits and alcohol as a whole. I am the type of person who will drink a drink and either I like it or I don’t. Please don’t expect me to discuss tannins or depth or any other of that lingo.

Thankfully I was working with Tania Gagnon, head bartender of Planta, who is an expert at her craft. The general ideas behind my  ultimate holiday cocktail were simple. Something sour with notes of elderflower and all while giving a nod to the holiday season.

Sour beverages of course traditionally contain egg whites to give them a smooth silky texture. Being a completely plant-based restaurant though the use of egg whites was simply out of the question. Once again though, just like with their dishes, Tania was able to come up with a plant-based ingredient to use in place of the egg whites – chickpea water! Chickpea water has the same properties as an egg white and acts like an emulsifying and foaming agent to give you the same silky texture and signature foam head sours are known for. In fact, chickpea water is so similar to egg whites that you can even make meringue from them.

With the largest hurdle of my ultimate cocktail creation taken care of, the rest was a breeze and hence the manifestation of the Allons.Y Happy Merry Everything Holiday Cocktail. In addition to being sour with notes of elderflower, cinnamon syrup was added to provide warmth and sweetness. Plus nothing says the holidays like hints of cinnamon. A splash of pomergrante was also used to give the drink the perfect hue for the season.

The drink is available starting today and available throughout the 2016 holiday season. It is of course best enjoyed in Planta’s jaw-dropping space and crafted by the experts themselves, but I’ve provided the recipe below should you wish to enjoy it all year round. And call me biased, but I happen to think it’s something I’ll definitely be enjoying for the entire year for years to come.

Allons.Y’s Merry Happy Everything Holiday Cocktail


  • 3/4 oz tequila
  • 3/4 oz St Germain elderflower liqueur
  • 3/4 oz cinnamon syrup
  • 1 1/2 oz lemon juice
  • 1 oz chickpea water
  • 1 oz pomegranate juice
  • Soda Water


  • Pour all ingredients into cocktail shaker except for the soda water
  • Shake vigorously for 10-15 seconds
  • Add ice to cocktail shaker. Shake again for 10-15 seconds
  • Strain mixture into champagne flute
  • Get wild. Just kidding. No really
